To get truly cheap flights you either have to be flexible on dates, be subscribed to something like Scott’s Cheap Flights that emails you mistake fares, be willing to leave from a different airport, or use credit card/airline points.
Zoom in to europe on the map and look for the most affordable destinations. If you want to get advanced here- I found if I am flexible about dates and cities, and want to visit multiple- I will look for the cheapest one way ticket to a city in europe.
I’ve just found numerous cheap flights with Air Europa in July for $300ish. Fly into London you can then get some cheap easyJet flights into Europe.
London is notoriously expensive to fly in/out because of high taxes. Try local European airlines to fly within Europe and you'll surprised how much you can save + get to see some other towns too
Book asap as prices wont drop from here on out. Summer is peak season for Europe routes so prices go up as seats sell. Earlier the better. Some 3rd party OTA's also have net contracts and can undercut the published airline rate so make sure to use Google flights or Skyscanner to get the best rate.
