This is by far THE cheapest flights I ever found and you can look at prices for every day of the month. I found a $650 flight from California to Germany and the days both before and after were over $1200
The best trick is the "island hopping" method. Don't worry about getting a direct flight to your destination. Just take the cheapest direct flight to anywhere in Europe. From there, take a low-cost flight to your final destination.
Check flights to Madrid, London or Amsterdam. Should not be that expensive from Canada. I regularly see flights in the 300 to 400 Euro range to Toronto.
Use Kayak.com/explore/ or Skyscanner to look up where it'll be cheapest to fly into compared to where you wanna go and then if another place is cheaper (likely), see if it'd be worth it to get that flight plus a budget flight to get to your destination.
