The first thing to note is Notability does cost more (yearly payment), vs. GoodNotes which is a one-time payment. This is definitely one of the biggest things to consider.

They each have their pros and cons, and I find myself using both pretty frequently. Notability is definitely my main note taking app, but GN is more appropriate in certain cases. Basically, my advice to you is to invest in both, especially because GoodNotes is a one time payment, as of now at least.
Goodnotes. The new notability update made the ui worse and started draining my battery. Goodnotes now has the better ui, plus it doesn’t drain my battery.
