Whenever you revisit Tomahawk Man, Yamato Man, Knight Man or Centaur Man's stage after beating it once, their palettes change. I imagine this was a subtle way to signify to the player that they had Beat Plates, or maybe it was simply a way to make the repeat playthrough feel fresher.
